Ingredients for tasty vegetarian ravioli

What you’ll need

  • 🥟 1 packet of gyoza (or ravioli) wrappers
  • 🥬 1/4 white or Chinese cabbage
  • 🥕 2 large fresh carrots
  • 🍄 150 g shiitake mushrooms
  • 🧅 2 spring onions
  • 🧄 1 clove of garlic
  • 🫚 1 small piece of fresh ginger
  • 🥢 2 tablespoons of soya sauce
  • 🍶 a dash of sesame oil
  • 🧂 1 pinch of salt


Step-by-step preparation guide

Start by chopping the cabbage very finely. Our tip for a perfect filling: place the finely chopped cabbage in a bowl with a pinch of salt to draw out the moisture for about ten minutes. Then squeeze it firmly with your hands to remove the water; this will prevent the pastry from becoming soggy when assembling the dish.

Next, chop the carrots, shiitake mushrooms, spring onions, garlic and ginger. Mix all these vegetables with the drained cabbage, then season with soya sauce and sesame oil. To assemble, place a teaspoon of filling in the centre of a disc of pastry. Moisten the edges with a little water, fold in half and seal by making the characteristic small pleats.

Pour a little water into the pan of your slow cooker and bring to a simmer. Arrange your gyozas in the stainless steel steamer basket. To prevent the pastry from sticking, remember to lightly oil the base of the basket or line it with large cabbage leaves. Place the basket over the pan, put the lid on and steam gently for about ten minutes. Remember to turn the lid slightly so that the steam has a small gap to escape through the crack in the lid.

How should you store your homemade gyozas?

If you want to get ahead by preparing your dumplings during your Sunday batch cooking session, or if you have a few left over after your meal, storing them properly is essential.

We recommend storing your gyoza (whether raw or cooked) in a vacuum-sealed storage container made of borosilicate glass.

This safe, neutral material is ideal for preventing strong odours such as garlic or ginger from being absorbed, and vacuum-sealing helps to preserve these foods for longer.

Your ravioli will thus retain all their freshness and flavour until your next meal, without affecting the taste of your other foods in the fridge.
