Why cook braised endives in autumn?

Endives are the quintessential autumn vegetable and deserve a pride of place on your seasonal menus. The braising technique transforms its firm texture into an incredibly melt-in-the-mouth centre. By pairing it with the rounded flavour of honey, you create a perfect balance of flavours: the endive’s slight natural bitterness gives way to caramelised juices, offering a comforting side dish that will win everyone over to this produce of the earth.

What you’ll need

  • 🍲Pebbly's cocotte
  • 🥬 4 good-sized fresh endives
  • 🧈 30 g unsalted butter
  • 🍯 2 tablespoons of honey
  • 🥣 15 cl vegetable stock
  • 🧂 Salt and freshly ground pepper
  • 🌿 A few fresh herbs (thyme or parsley) for garnishing

Step-by-step preparation instructions

Here’s our foolproof tip for preparing endives without any bitterness: using a small paring knife, cut off the base of each endive. Then simply cut them in half lengthways and remove the core. It is precisely in this part that the bitterness is concentrated!

Melt the butter in your cocotte over a medium heat. Place your endive halves in the dish, cut-side down, and leave them to brown for a few minutes to seal them well. Then drizzle the honey directly over the vegetables to start the caramelisation process.

Once they have taken on a delicious golden colour, pour in the vegetable stock. Season with salt and pepper, reduce the heat and cover. Leave to simmer gently for about 20 to 25 minutes. The steam will gently settle over the food, making it incredibly tender and juicy.

How should you store your leftover braised endives?

If you’ve prepared extra portions for your weekday lunches or to get ahead with your batch cooking , it’s very easy to store them in the best possible conditions.
